Journey With Upgrad My Journey With Upgrad I was searching for a field of my interest, and while scrolling through instagram reels i came across Digital Marketing. I used to see many reels about this and how they used to make a good amount of money, while giving their quality time to their family. That resulted me in searching for a good & online career institute which would help me get a job which is of my interest. It did not take me a long time to explore Upgrad as an online & flexible learning platform but due to some personal emergencies i had to take a turn from the course. After some months i again went to search on upgrad whether they are offering still offering the course or the batch was full,and to my surprise there were still some more seats vacant. The upgrad team approached me & gave a confirmation that this course will benefit me in order to achieve my dream job. From day 1 of my learning about the modules, i am very much inspired about the teaching system of MICA. Upgrad has also appointed a student buddy to resolve any non academic query & provide a day-to-day updates about our module deadline,our deadline of assignments, about our live sessions on weekends through the means of mail & telegram. Student buddy is really helpful who clearifies all are doubts 24×7. The live weekend sessions are taken by industrialist or some lecturers who are associated with upgrad. Also doubt solving sessions are arranged and the lecturers are so calm & patient about the queries raised to them. They always clear our doubts so easily & effectively, As i am still on the learning phase, i am fully confident that in my learning journey,Upgrad will assist me in getting placements in top reputed companies and also to become a successful digital markerter “The beautiful thing about learning is that no one can take it away from you.” That is the attitude you should always keep with you & should always strive to learn new things whenever you get a chance and should be ready to face new challenges and take responsibility regardless of any circumstances or hardship. From pani puri to pav bhaji no big restaurant can match its taste. Street food lets you know the culture of a place quickly. It also offers a best experience on taste buds. One of the greatest things about Indian street food is that it is readily available in almost any places & at any hour. Just by looking at the massive crowd you get to know how delicious the food will be. STREET FOOD There are so many delicious street food available in India that every foodie must try once in a lifetime, but why not take a little bit effort and make the same at your own home with loads of love & enjoy it with all your family members. Since it is said that some foods are made on special occasion, but by preparing street food any day can make the day special. So let’s get cooking with a very popular street food which is loved & ordered by everyone every time they go for a snack time or for lunch or dinner time, PAV BHAJI Pav Bhaji- Who can resist it? I have been a fan of this delicious dish from a long time. Whenever i used to try this at home i used to miss the actual taste of the street pav bhaji.After several attempts i succeeded.Now i have become an expert in cooking homemade Pav bhaji & also my family members love to enjoy it. So i thought why wouldn’t i share my homemade recipe with you all as no recipe should be kept secret if you are good at it share it which will result in sharing the same with the next generation. So Pav Bhaji is basically from Maharashtra, which is basically a mixture of mashed vegetables in a thick gravy with a touch of spice in it and also with loads of butter to add that extra lip-smacking taste. This dish is actually considered a complete meal in itself with soft buttery & masala pav. LET'S GET COOKING Prep time: 30-35 mins Cooking time : 30-35 mins Serves: 7-8 people Pav bhaji masala Ingredients: Coriander seeds 5 tbsp Cumin seeds 3 tbsp Cloves 20-22 nos. Star anise 4-5 nos. Black cardamom 5-6 nos. Cinnamon 3-4 sticks Bay leaf 4-5 nos. Kashmiri red chillies 20-25 nos. Fennel seeds 3 tbsp Kasuri methi 2 tbsp Turmeric powder ½ tsp Dry ginger powder ½ tsp Hing 1 tsp Kaala namak 1 tsp Aamchur powder 1 tbsp Salt 1 tbsp Pre prep Ingredients Red chilli paste: ● Kashmiri red chillies 15-20 nos. (deseeded & soaked) ● Water as required Garlic paste: ● Garlic cloves 3/4th cup ● Water as required Boiling veggies: ● Boiling water ● Phool gobhi 1 medium sized ● Hare matar 3/4th cup ● A pinch of haldi powder ● A pinch of salt Method: ● For red chilli paste, transfer the soaked kashmiri red chillies in a mixer grinder, add water as required & grind in a fine & runny paste. ● For garlic paste, transfer the garlic cloves in a mixer grinder, add water as required & grind in a fine & runny paste. The consistency should be watery. ● For boiling the vegetables, set water for boiling in a stock pot, add the veggies, haldi & salt, boil and cover until it turns soft & is cooked. Once its cooked strain the water & keep aside. Base bhaji Ingredients: ● Butter 50 gm + oil 2 tbsp ● Jeera seeds 2 tsp ● Onions 2-3 medium size (chopped) ● Capsicum 2 medium size (chopped) ● Potatoes 7-8 medium size (boiled & mashed) ● Tomatoes 7-8 medium size (chopped) ● Boiled green peas ● Boiled cauliflower florets ● Beetroot 1 medium size (boiled & grated) ● Fresh coriander a handful (chopped) ● Salt to taste ● Prepared pav bhaji masala 2 tbsp ● Kashmiri red chilli 1 tsp ● Dhaniya powder 1 tbsp ● Haldi powder ½ tsp ● Kasuri methi 1 tsp ● Green chilli paste (paste of 2 green chillies) ● Prepared garlic paste 7-8 tbsp ● Prepared red chilli paste 7-8 tbsp ● Hot water as required For tadka: ● Butter 50 grams ● A pinch of jeera seeds ● Prepared red chilli paste 4-5 tbsp ● Garlic paste/water 2-3 tbsp ● Pav bhaji masala 1 tsp ● A pinch of garam masala ● Salt to taste ● Freshly chopped coriander leaves ● Butter as per your preference ● Lemon juice 1 tsp Method: ● Set a big size tawa on medium high heat, add butter & oil, further add jeera & allow it to crackle, add onions and cook until they turn pinkish in colour. ● Further add capsicum and cook on high flame for 2-3 minutes. ● Further add the boiled & chopped veggies, salt, prepared pav bhaji masala, powdered spices & green chilli paste, mix it really well & try to break down the veggie chunks with the spatula. ● Further add prepared garlic and chilli paste, mix well and initially add 1-2 cups of hot water, now use a pav bhaji masher and start to mash the bhaji really well, keep the flame low and mash until the bhaji is almost crushed. ● You can adjust the consistency of the bhaji by adding additional hot water, i like the consistency of my pav bhaji to be little thin just like the street vendors do, you can adjust the consistency of the bhaji as per your preference. The whole process of cooking will take about 15-20 minutes. ● The base of the bhaji is ready, let

DESSERT RECEIPES From easy desserts like different flavour cakes,brownies,cupcakes, mango mastani, coconut barfi & much more have been made and tested multiple times at our home. This cake recipe is the most liked by my friends & family member. The rich taste of rasmalai in each layer gives a feeling of heaven. The cake remains moist, rich and so tasty. INGREDIENTS YOU’LL NEED FOR THIS SCRUMPTIOUS CAKE. This is one of the recipes where i wouldn’t recommend any substitutes, it’s this proportion & combination of ingredients that will make the cake moist & mouth watering. Flour 1+1 Cup Baking Powder 1 Tsp Baking Soda 1/2 Tsp Milk Powder 2 Tbsp Pinch Of Salt Powdered Sugar 1 Cup Oil 1/2 Cup Rasmalai essence 1 Tsp Lukewarm water 1 Cup Vinegar 1.5 Tsp For Frosting: Chilled Whipped Cream 1 Cup Rasmalai Essence 1 Tsp Can take Normal water or Rasmalai milk instead of sugar syrup to keep the cake moist. Cake Decoration: Rasmalai balls as required Kesar strands dipped in milk soaked & peeled Pista cutted into half. How To Make Here is the step by step guidelines on how to make this cake. Add all purpose flour (maida), baking powder,baking soda, powdered sugar,milk powder & salt & sieve & whisk it well into a bowl until combined. Add the wet ingredients like oil,rasmalai essence & lukewarm water. Whisk it well. Grease the cake tin with butter & maida (keep it in fridge for sometime as i provides bet results). Lastly add vinegar to the cake batter & whisk it 1-2 times & pour the batter in the tin You can also bake the cake on the gas. Take the same tin & in a big pan or wok add salt in it & put a stand inside the wok & place the tin & cover it with a lid. You can check your cake after 35-40 mins. Mostly it takes time around 40-45 mins to bake. Once done let it cool down before demoulding For oven bake your cake at 180C in a preheated oven for 30-35 mins. To check insert a skewer into the centre, if i comes out clean then your cake is baked. Allow it to cool down for 15 mins then demould it & then let it cool down before frosting, For Frosting Place the cake on a turning table Cut the cake into 3 parts with the help of a knife. Take the last layer first for frosting Keep the last layer on the turning table, apply rasmalai milk on it, like soak the cake layer with that milk. Then apply the whipped cream (add rasmalai essence in it) on the cake layer evenly & then put the crushed pieces of rasmalai on that layer. Repeat the same with the other 2 layers. Crumb coat all the 3 layers with whipped cream & free it for sometime so that the cream remains intact to the cake layers Then after that remove the cake from the fridge & apply one more layer of whipped cream to it At the top layer the texture of the whipped cream should be smooth & even. Then decorate the cake as per your choice.(Use rasmalai ball, kease strands & soaked pista) Again fridge for sometime & then cut them into pieces & enjoy the cake. Rasmalai- Here i have used readymade rasmalai (small rasgulla balls). You can also prepare that at home. The balls have been dipped into warm milk for sometime so that the balls get the flavour of the milk. (Add kesar strands also in the same) Eggless Rasmalai Cake Points to note while baking & frosting:- Take the exact ingredients as mentioned or else it can lead to some up & downs. By taking this sponge cake as a base cake you can make any flavour cake. (Just change the essence) Don’t over whisk the batter as it may result the cake to not rise up After pouring the cake batter in a tin do tap the tin 2 times to remove the air bubbles. While frosting see to it that the room temperature is not to warm as the whipping cream will not get whipped the consistency will remain flowy. Don’t over whip the whipping cream. While applying milk/water/sugar syrup on the cake layer see that the cake doesn’t get over moist, this can result to breaking of the cake. Don’t apply too much whipping cream. Keep it less & let the taste of your baked cake too come while eating. Through Maharashtrians have various versions of kanole, which maharashtrians also refer as karanji, yet CKP version of kanole is special & different.
